The Funny thing? Life as livestock, knowing you will eventually get eaten? That's un UPGRADE as far as a low ranked Skaven is concerned. Will they try and escape getting eaten? Yes, but that is likely easier than backstabbing their superiors back in Skaven society.

let's just say that where he is now, he has 97% higher chance of survival, even if the tigers would consider eating him, then he would have had had he not entered the portal, the life of a Skaven is ... (I have now spent 5 minutes trying to follow this up, trust me this is paradise for him, no matter how long he survives)

I see no circumstance under which engaging in 'relations' with a Skaven doesn't give you an STI at the very least, and very possible Warp corruption to boot. Just being around WH Fantasy Beastment can turn a person into one, and while Skaven are a race apart and somehow more stable than them, better safe than sorry.

Milking would be fine but any attempt to kill will result in the spell breaking before the action is made, releasing the person from the curse. This was shown in the comic when Brutus attempted to bite the other henchman that had been turned into a chicken.
