As I mentioned multiple times prior, it is really dependent on what you want. I think it is a much more enjoyable watching experience using One Pace. Especially as a fellow manga reader. However! If you are willing to endure the Toei pacing, it will certainly be better for long term viewership and money. As people will pay just for One Piece reactions. Also! Toei occasionally has some really good anime only moments. If I were you, I would do a bit of both. Use One Pace up until Wano, then watch the OG cut to catch up. There are still some pacing issues in Wano, but it isn't as aggregious as prior arcs.

Based on your schedule. I would say no. Because it would literally take 5+ years for you to catch up.

I literally just made it from the Zoan arc up to the current arc Egghead using One Pace until I ran out of episodes, so I feel qualified to speak on this. There's only one moment* in my whole viewing experience where I felt like I may have had a worse experience watching One Pace. Outside of that, it made it a more enjoyable watch and saved me literal days of my life in time. I would say give it a go, and if it feels weird switch back. I burnt out on One Piece after making it through Dressrosa a few years ago just because of the sheer size the arc and the slog I felt making it through the back half of it. When I had to switch back to normal One Piece at the end of Wano, I started to feel a bit of that "ok this is cool, but get on with it" which initially made me put it on hiatus. I can't say for certain what was changed between One Pace and the normal release, but I enjoyed One Pace thoroughly and didn't feel like the quality of the show was affected. *: Luffy's big fight on Whole Cake Island

The only other thing I'd say is that when you're getting back into it, lowkey the anime's flashbacks to older info are helpful sometimes 💀
