It's great to hear that the next big pack is not far away and progress on it is coming on well. That's a great selection of music themes and styles you already have listed in there. Is Medieval music going to involve mainly music with actual medieval style instruments? If not, perhaps that could be a worthy set to go for as well. I always loved the medieval music played on medieval instruments, including pirate style shanty songs, Irish folk music, etc. Regarding the retro music, personally am not likely to be needing it any time soon, but would love to mention some of the old games whose OSTs I enjoyed. Aside from the obvious ones like Final Fantasy and Sonic, I really enjoyed the OSTs in Castlevania games, Streets of Rage, Golden Axe, and Aladdin. As for whether I prefer it to be true to how it was or with modern production style, not sure. Perhaps worth seeing what sounds better. (Maybe both versions even?)

The medieval set will use period-appropriate instruments. Such instruments also appear in my score for Renaissance Kingdom Wars (and previous Kingdom Wars games). Recorders, crumhorns, bombarde, lutes, organ, harpsichord. I have done a little study of the form of music from those centuries, though I could stand to learn a lot more. So much of it was choral worship music, but I've found good examples of instrumental music as well. I'll try to hit a sweet spot between authenticity and a more modern/fantasy interpretation of those styles. Actually, a great show and musical score centering on that period of time is Wolf Hall. I need to go listen to that again. You list some excellent games to take inspiration from! I'll definitely get some of that flavor in the mix.
