Coincidentally, I made corn pones today. Corn pone was something I'd heard about all my life as a classic Southern food, but I had never had it. Never even SEEN it! Didn't know what exactly it was! Now I know why you don't see them very often: They aren't all that good! It's basically a hard, dry, primitive version of cornbread which you can throw together quickly with very few ingredients and minimal prep time. The pones (i.e. cakes) are formed by hand and I guess would have originally been baked on a hearth.
