Preemptive Advice: Read the entire recipe first, before you begin, to avoid added difficulty.
Don't get used to these units. 😉 I just happened to have the recipe in both, this time.
Ingredients:
25g / 2 tbsp – Butter
900g / 2 lbs – potatoes
2 large onions
15ml / 1 tbsp – dried thyme
15ml / 1 tbsp – oil
2 large bacon strips, chopped
4 large chicken thighs halved
1 bay leaf
600ml / 2 1⁄2 cup – Chicken Stock
Salt and ground pepper to taste (please wait to taste until after cooking) - We tend to do about 2.5ml / 1⁄2 tsp of each, depending on the stock.
Directions:
1. Preheat oven to 150° C / 300 ° F
2. Slice potatoe into quarter inch slices and layer half in the base of a large, heavy casserole dish
3. Thinly slice the onion and layer half on top of potato layer
4. Sprinkle half of Thyme, Salt, and Pepper onto onion layer.
5. In a large frying pan, heat butter and oil to brown the bacon and chicken
6. Transfer chicken and bacon to the casserole dish, keep the liquid fat in the pan
7. Add bayleaf among the chicken pieces, sprinkle with remaining seasonings
8. Add remaining onion in a layer, then layer remaining potato on top
9. Pour the stock into the casserole dish
10. Brush the top layer of the sliced potatoes with the liquid fat from the frying pan.
11. Cover tightly with foil or oven proof lid
12. Cook in preheated oven for about 2 hrs, until the chicken is throughly cooked, and tender.
13. Preheat a broiler or grill to high.
14. Uncover casserole and cook under heat until upper potatoes are brown and crisp (5 - 15 min, in our experience)
15. Serve hot!
Obligatory Disclaimer: 😅 Please be safe and cook at your own risk.
J.L.Mullins and MM do not guarentee your safety while you cook, though we do know this to be a tasty dish, if done according to the above recipe.
Enjoy! 😉
