Getting tofu is a custom in korea, there seem to be multiple reasons.. one as it is a protine rich nutritious item - the prisoner might have had lack of nutrition in jail / prison and as its white colour symbolises purity, innocence, a fresh start -- so it reflects hope that the released prisoner can reform / never go back to prison
