The guy who works for Stannis and got the pirate to join is Davos, a smuggler who Stannis had knighted, and the young man with him is his son. Melissandre is also called "The Red Witch". She serves "The Lord of Light" which is a different god to the "Old Gods" and the "New Gods". It's a god from the East (Essos).

The thing with marriages and nobles is its usually an arranged marriage for political alliances. Stannis never chose his wife, never loved her, only 'did his duty' with a clenched jaw. Ned and Cat were one of the few lucky happy couples where they truly liked each other - and even that took time.
