Prelati summoning themselves is crazy. Francois is the OG Prelati, Francesca is one of the incarnations. Also Prelati is the one who gave Gilles (F/Z Caster) his spell tome. Also mentioning Touko in the same sentence as Zelretch is crazy powerscaling. As others have mentioned, Touko is the one who created the doll body for Shirou and is a prominent character in Kara no Kyoukai. So the boy who summoned Watcher is supposed to become a Lancer through completing trials. Watcher's shadows are notable people and legends who failed in their trials, the girl with pilot goggles probably being the most obvious - Amelia Earhart, most likely. Enkidu does indeed notice being watched, because to Enkidu the entire planet are their eyes and ears. Only someone who could become invisible to the World itself would be able to avoid being detected by Enkidu. The Grail mud is supposed to contain all the World's Evils, in essence - the true nature of Humanity. When Bazdilot orders Alcides to accept Humanity within himself, he's injecting him with the Grail mud. The Death Cloud just wants Tsubaki to be happy reaffirming its status as a good boy.

I am impressed you caught on to the Maiya Hisau thing. Most people will not catch it because it probably won't be discussed further in the anime. You have to read Fate/Zero just to know about his birth.

Captain is Captain Ahab, the guy obsessed with Moby Dick who ends up getting eaten by the whale. The guy with the Wings is Icarus, who flew to close to the sun.
