this is why i just say dio just had an extra coffin, it being the same coffin just makes no sense.

I feel like the coffin thing is so easy to explain, even if it sounds like bs, that's all on Araki not the viewer. Dio hides into a second layer under the main layer where Erina and baby Lisa Lisa are. Somehow he also dragged Jojo's body in there too. They open up the casket, which is hollow enough to float on water, and its daytime, so Dio won't risk coming out, especially as just a head or possibly already in a weaker version of Jojo's body. Erina is saved after a few hours, still in day light, and simply lets the coffin sink into the sea, probably full of water which stops it from floating. That's it.
