Oh no, didn't watch this until now lol. Wonder if you have eaten your Kimchi already lol. Kimchi that is more than a week is what you would call old kimchi. Those you wouldn't really eat them raw as it is. Instead, they are usually eaten cooked. You can try sauteing them with slices of tofu.
