The Japanese value freshness above all in terms of food and sushi / sashimi is best eaten immediately after it has been made rather than have eaten after seating on a counter for a couple of minutes. 🥰 / For tuna, the red/pink, fresh part is best for sashimi, the dark part (usually thrown by sushi chefs) are the grilled or fried as it tastes like beef rather than fish 😂
