Remember, Appa isn’t just Aang’s pet. He’s the very last remnant of the world he grew up in, the last connection he has to the Air Nomads, and the last friend besides Bumi from his life a hundred years ago. Of course losing Appa must feel like losing everything he has left. And that’s just besides the deep life-long bond Air Nomads have with their bison - I haven’t read them myself, but I’m told some of the extended universe books about one of the past Air Nomad avatars goes into that bond even more.

This show is actually animated by two different studios, because it’s so action heavy. in s1 you can see it more clearly but the style in which the characters are drawn is different

Aang's crashout hits hard. Bro had his childhood pet/friend stolen, muzzled and sold, and he was genuinely ready to kill. It would seem out of character in pretty much any other situation, but it makes sense here

Not only that, he is spiritual linked with Appa, he said this in book 1 episode 6 when he meets Roku's dragon: "You are Roku's animal guide, like Appa is to me" so that phrase tell us that every avatar has a sporitual connection with an animal through their lives, in this case, Appa is Aang's animal guide.

Aang crash out is beyond valid. Appa isnt a pet, hat best friend and is spiritual animal guide like Rokus Dragon. Not only that hes that last remnant of his past and culture. The bond they share goes hard.
