A skeleton gets some meat on its bones. But the meat stacks up differently than in life. A demon possesses a pure hearted bimbo and comes out equally innocent. A man turned into a giant/giant monster gets returned to normal... But not their old normal. Killer ventriloquist dummy/action figure gets turned into a more friendly playmate. Perhaps a Playboy Playmate. Or a fanservicey anime statue with no moving parts. Jealous killer car turns into a feminine robot (transformer?) to more fully be with its owner.

I've been wanting to do an skeleton girl for ages, but there are some obvious challenges on how to make her thick.

If you mean how to draw it, you could do like Honeda in Plus-Sized Elf: a translucent aura that becomes solid. Or it's wearing a suit of armor that suddenly puffs outward with meat and the flesh grows over the exposed bits. If you mean narratively, maybe a fat-positive witch takes offense. Or it's a resurrection spell gone wrong. Or a skeletal adventurer falls into a demon's flesh pit. Or a nude skeleton gets attacked by living clothes that want to be filled out.
