Bonus Peek: Father's Day Grilling! (Patreon)
Content
I had considered doing another recipe for the peek, but I've done a few of those recently, and the recipes I'm about to share are very simple, yet tasty enough that I still do want to share them. So let me present you with blue cheese burgers and beer brats!
The burgers are the simpler of the two. Grill your burgers as you do, but before putting them on to grill, caramelize some onions. Red, yellow, white, the variety doesn't really matter. Chop off the top, cut the whole thing in half from root to stem and slice into half-circles. Toss into a pan with butter or oil, and a bit of balsamic vinegar and cook them down until they're a deep brown, almost black. It'll take a while, so start them before the burgers. We're looking to concentrate the savoryness of the onions to go atop the burger.
Once the burgers are done, build your burgers as you like, but instead of ordinary cheese, put just a little blue cheese atop the meat, and some of the onions atop that. Less is more with the cheese, and while the point is to have funk cut through and compliment the dense meatiness, too much blue cheese is not often pleasant.
The brats start off with a good bath in beer and a few other things. The classic is just beer and more onions, but I also like to add about a tablespoon of fennel seeds and whole peppercorns. Cheap beer seems to work better than more expensive ones, I always just by the cheapest I can get. In a large pot, put in the brats, sliced onion, fennel and peppercorns, and pour in enough beer to cover, usually around three cans worth. Simmer on low for at least twenty minutes, up to an hour or more. Then grill and serve! I like mine with just mustard and a bit of cheese.
That's what I'll be grilling for my dad, and if you guys don't have time to get the stuff for this weekend, the 4th of July is just around the corner, and these grill up just fine for that, too! Either way, I hope you all have a good day either with your dad, or remembering him. And for those dads out there, I hope you get a day to relax. You've earned it.
