The boy who summoned watcher is believed to be the son of the girl who worked for Kiristugu and Fate/zero, its not out right confirmed but all the info we have leads people into believing that. Anyway we see that the boy summons watcher which is an extra class( these are classes outside the standard 7 saber, archer, lancer, caster, berserker, rider, and caster). Watcher doesn't fight they are just able to see everything that is going on and relay that to their master. What watcher is here to do is help the boy turn into true lancer by meeting certain parameters. Its kind of similar to Shirou from UBW who had completed certain trails and ascend to the throne of heroes which allowed Tohsaka to summon him. Bazildot(the mafia dude) used the mud from the holy grail war in Fate zero(this is the same mud from the grail that allowed Gilgamesh to remain in the physical world until he was defeated in UBW) which he got from Francesca Prelati to corrupt Heracles/Alceides and turn him into an Avenger, which is another extra class so Alcides is both an Avenger and Archer class servant.

Francessca Prelati( small girl with purple hair) summoned herself as a servant she had already explained that she has died multiple times which meant her previous incarnation was recorded in the throne of heroes allowing her to summon past versions of herself. In this case she summoned Francois Prelati as castor, which is the past version of herself that was a male. Fun fact the castor from Fate Zero who was killing all those kids was a disciple of Francois and the book they used for the magecraft was called Prelatis spellbook I was going to explain another thing but I'm not sure if you ever watched the Fate Heavens Feel movies(highly recommend it if you haven't some of ufotables best work).

Watchers spirits mentioned that watcher isn’t an extra class, extra isn’t a full catch all it seems.

Lash

That’s in reference to the spirits or “constructs” connected to watcher. Watcher itself is an extra class, but the spirits that talk to the boy are like simulations or duplicates of various heroic spirits that watcher uses to instruct the kid. Since watcher itself doesn’t have a body. If that makes sense
