So I don't think the extracts of the review we see are real, I think, like the articles we saw him imagining earlier in the season, the quotes we see are a reflection of his hopes and anxieties. I think he curses because he had missed calls and texts from both Jimmy and Computer so he presumes it's bad since Jimmy said he would cut him off if it wasn't a good review. Just my interpretation though. Season 3 and season 4 were meant to be filmed back to back, with a shorter break between seasons, but they ended up only filming some of season 4. Based on cast availability production isn't expected to resume until early next year. I think that's why this season feels less self contained than other seasons, though with so many shows I've watched recently feeling rushed I prefer the slow approach even if it means a season feels a little incomplete. This episode seems to be a bit divisive but personally I love it - Sydney getting to meet and be inspired by all these top class chefs, Carmy confronting David Fields (and getting no closure from it which is sadly realistic), everyone, including Andrea Terry, enjoying the after party at Syd's, the chemistry between Richie and Jess, the chemistry between Luca and Syd, the return of the inflatable hot dog from season 1, and then it all comes crashing down with that panic attack. We've seen panic attacks on this show before be something about Ayo Edebiri's performance made it feel real to the point of slightly triggering to me. I also think it's am interesting parallel to Carmy's panic attack last season, thinking of Syd calmed him down but Syd's panic peaked when she thought of Carmy. I've seen multiple interpretations but I think that panic attack is Syd realising all she'd leave behind if she leaves the Bear (hence the shots of everyone else), but ultimately realising she has to, that she can't keep working with Carmy when he's treating her so poorly.

The first chef you see in the episode teaching Carmy how to truss a chicken is Thomas Keller (TK), one of the most famed chefs in the world. He is the owner of The French Laundry in Napa Valley and Per Se in NYC, both of which are 3 Michelin star restaurants, and widely regarded as two of the best restaurants in the world. Keller has the distinction of being the only American chef in the world to simultaneously own and operate two restaurants with 3 Michelin stars each; he owns a third restaurant in Miami called The Surf Club, which has 1 Michelin star.
