Fishman Island is not the only arc they did a shortened version of. There's Arlong Park with a newer animation style, East Blue as a whole in a 2-3 hour version and I think Skypiea as well. It's cool to have that to show to some friends who've never watched One Piece to give them a taste of the show in a condensed way but I wouldn't recommend it at all for a complete watch through. I can't speak for the Fishman Island one because I haven't seen it, also no spoilers obviously, but to give you an example: In The Story of East Blue they skipped Logue Town completely which is insane. They went from Arlong Park to their promises and straight to the Grand Line. Imagine starting with that and continuing Alabasta watching the normal episodes and having no idea who Smoker, Tashigi or Dragon are. You're definitely making the right choice here.

The Fishman Island shortened version is not only shortened but also with bit more updated artstyle. It definitely looks nicer, but I still always recommend watching the original first. They cut my favorite joke out in the shortened one. :(

It's pronounced Oto-he-meh, just in case. And when it comes to Fishman Island and pacing.... yes, it is noticeable in certain parts but in my opinion is not that bad. I have always said that if there's one arc in the whole series that actually needs an official condensed version.... is Arc 27 (for context... Fishman Island is Arc 25), that Arc could literally be 15 to 20 whole episodes shorter if they removed all the padding it has. In general terms.... the long arcs in One Piece have always been the ones who have suffered the most from pacing issues (especially since after the time-skip almost every arc is long). But if you wanna know my take.... im glad you're sticking with the original anime. I do like One Pace too but for someone watching the series for the first time... the original anime is the best option (at least until the East Blue remake made by Wit Studio comes out).
