I worked as a cook that pickled our own onions. We used an apple cider vinagre and water base with a ton of sugar, and would pour the boiling mix over some ultra thin red onions. The mixture would turn purple almost immediately. Way different than pickled jalapeños, which I believe are cold soaked in a vinagre mix with no sugar. Hope that clears things up!
