Lou, yep. Laurelyn is Laure's mother, which makes Lou her grandchild

I feel like once this chapter is done I'll need a few recap pages explaining in very simple terms just what the heck happened with Lou's family. But okay... Laurelyn had a sister who left the family, showed up and stole Lou away (for the best IMO), then fell into a coma and... Did she become Laure's Frosslass?

Not exactly; Laurelyn has a sister; this sister left the family for personal reasons, got eventually ejected when the family felt they have given her enough time to return (or just communicate with them) When they wrote her off, her "Gift" was taken away, causing her to slip into a coma. Later, she takes Lou, and pass away when Lou is around 16. She has no relation with Elsa's Froslass

And they did give her plenty chances to at least loop back to confirm the contract was still in order Since she didn't take her duties seriously, they cracked their fingers and went " mkay, time for some ol' fashioned Fae consequences"

She wasn't, the Fae had Laure give her child to Lea. From Laurelyn's own perspective, however, her grandchild was taken away from the family

Did we see that part happen in the past? It's been a long time and am unsure if I'm forgetting a part of Lou's backstory. Feel like this needs a full Wiki at this point, lol.

Got me to go back and reread all of chapter 1. Man that was nostalgic, and yeah I'd totally forgotten about Lea from back then.
