old valyria is like the roman empire of this world but with dragons and high valyrian is like latin. they ruled over most of essos and fell 400 years prior to GOT. new cities rose or old cities came back to power in essos but the valyrian influence was great and most of essos now uses either high valyrian or a dialect of it. the targaryens are the only surviving nobility of old valyria

Daenerys has been against slavery from season 1. It's not a new development for her. Her first actual exercise of power was trying to convince her husband Khal Drogo to stop taking the women as sex slaves. This literally caused internal fighting between to Dothraki. It's def not a "newfound personality." Jorah tried to convince her that slavery is just the way it is but Dany claimed the older captured women as part of her party and told her husband that if a Dothraki wants to lay with the younger women they capture then they must marry them. Daenerys herself feels as if she was treated like a slave her entire life, first by her brother and then when she was sold to Khal Drogo. She cared about the plight of the slaves before she cared about trying to take the Iron Throne. Why did she go to Yunkai? It was literally the next city over from Astapor where she got the Unsullied from. Here is the map https://static.wikia.nocookie.net/gotascent/images/c/c5/Slaver%27s_Bay.png She wasn't going out of her way to get there, it was just the next great city on the map as she makes her way across "Slavers Bay" and when she found out the city has 200,000 slaves, well...you saw what happened when she met with the Yunkai master. She turned down his ships and gold because she wants freedom for the city. Btw, during the meeting with the Yunkai master she debuted her new title. "Daenerys Stormborn of House Targaryen. Queen of the Andals and the First Men. Khaleesi of the Great Grass Sea, BREAKER OF CHAINS, and Mother of Dragons." The breaker of chains bit is a new title she added after liberating Astapor.
