Interference: I’ve encountered two distinct types. One, as you describe, where it feels like the “Other Language Dept” is in control. I (continue to) have this happen in French, where I’m at B1. I’ll have a good head of conversational steam built up, and then German (where I’m C2) will break in, but never English (native). The other sort of interference I’ve run into was learning Yiddish in Basel - we were all Swiss German speakers (my dialect is Bavarian, but for this situation the difference is trivial). Yiddish, Bavarian and Allemanic (Swiss) all have a lot of Middle High German features but not all the same ones. Eventually, this is an aid to learning Yiddish for a High German speaker, but in the beginning it creates a whole army of false friends.

How many at the same time? Agree, it’s so tempting. There’s nothing wrong with wanting to learn them all, but I find it’s generally inefficient to try learning languages in parallel IF you want more than a flirtation. When I had Latin and Attic Greek in high school, they were staggered by a year. That worked, but we also weren’t trying to get beyond a reading ability. To get handy with a language as quickly and efficiently as possible requires “immersion” if only in one’s attention. Time is finite for the individual, and it takes half as much time to attend to one thing as to two. Fortunately, each language that you can get to at least a B level is now one more tool in your toolkit to facilitate learning more languages. Slowing progress to the B level by spreading one’s attention too thinly in actually counterproductive.
