Floki was fascinated by the paper burning because Vikings don't have paper. They share everything by word of mouth. The priests were the one's speaking Latin and the Vikings spoke a different language. Since the Vikings believe in magic and the head priest was praying in his language, they probably thought he was trying to curse them.
