I believe that butter wasn't used at all in Japanese cuisine until it was introduced in the 1930s, and even then they made a special "Snow" brand that apparently tasted less like butter than it's meant to. That's because some Japanese people actively dislike the taste of butter - there's a written account from a Japanese soldier at the turn of the 20th Century, when they went aboard an American ship. Apparently they actually kept their mouths tightly shut when walking through a cabin where some US soldiers were eating sandwiches (or something), because they couldn't stand the smell and (this translated quote is paraphrased from memory) "we didn't want to risk getting that stuff into our mouths!" EDIT: pressed enter too early. There was a phenomen (sp) in the early 20th Century where Japanese citizens who were considered to be too in thrall to Western ideals were derided as "butter-stinking".
