Happy happy Sunday. It was a busy week, so I wanted to do something easy with leftovers I had. In these cases, nothing is better and more nutrient dense than a load of cu- I mean, heh, some chicken fried rice. This is loosely based on another recipe I found with my own freestyle cook interpretations. It is sooooo yummy. If you do make it along with me, let me know! I hope you enjoy.

Ingredients:

  • 3 boneless skinless chicken thighs (or two boneless skinless chicken breasts) chopped small (more or less depending on dietary needs)

  • Fresh ground black pepper to taste

  • 3 tbs low-sodium soy sauce

  • 1 tbs of butter (I used dairy free)

  • 1/2 tbs of lemon juice

  • 1 1/2 cups of mixed frozen vegetables

  • 1 tbs of jarlic

  • 1 1/2 cups of leftover white rice (more or less depending on dietary needs)

  • 2 eggs

  • 2 tbs of neutral oil (vegetable)

For the sauce:

  • 1/4 cup of low sodium soy sauce

  • 1/2 tsp ground ginger

  • 1 tsp lemon juice

  • 1 tbs light brown sugar

  • 1 tsp sesame oil

  • Splash of rice vinegar

  • Splash of water

  • Black pepper to taste

Would you like me to write out the entire recipe?

Babe, how about a gift card to amazon for those shortbread cookies?

I am SUPER late to listening to this, BUT: 1. A, sir, you need a wok. Maybe one will appear at your door, who's to say. 2. My go-to, high-heat oil is avocado oil. I highly, highly recommend 3. I'm glad I'm not alone in the random chatter and ramblings to both myself and the inanimate objects in my home 😆

I relate to watching cooking shows growing up. They're so entertaining and relaxing (if you're not watching American Cookoff, of course). If you haven't already, you should check out SORTED Food on YouTube. They have great content and lots to learn!
