I know, I know. I am late to this. Was supposed to release a new Fed and Feral for the Cookbook yesterday, but the weekend was insanely busy and stressful for me. While I didn't have a new recipe to record as I made, I do have one to share that I made recently.

Anyone up for German food? This Bratkartoffeln recipe is a mix of a few I've found as well as tastebud-memory from trips to Germany. (insert long pre-recipe story about how I visited Germany and my love for potatoes that takes 3 hours to scroll through)

Bratkartoffeln

(add or reduce recipe for amount of servings, I was prepping for a large party)

Ingredients:

  • 2lb Waxy potatoes (I used yukon gold)

  • 1 sweet yellow onion (new petname?)

  • 1lb thick-cut bacon (I like it THICC)

  • 2 cloves garlic (fresh or jar, fresh if you have a cool new garlic press like me)

  • 1 Tbs parsley (I used dry, but fresh is BETTAH)

  • 2 tsp paprika

  • 3 Tbs butter (I am dairy free, so I used Country Crock olive oil butter)

  • Salt and Pepper to taste

Recipe:

  • Chop potatoes into a large dice and chuck into a large stock pot. I keep them peel-on, but you can peel them if you like. Salt generously and fill with just enough water to cover potatoes. Bring to a boil until fork tender

  • While the potatoes are boiling, cut the onion into thick strips and the bacon into a medium dice.

  • In a large skillet on medium heat, fry the bacon slowly to render out fat. Once a little color is achieved, add onion and a dash of salt to help sweat and caramelize. Continue cooking on medium heat until onions are translucent.

  • Strain potatoes once soft and add directly to onion and bacon skillet. Stir occasionally, you want the sides of the potatoes to get some browning.

  • Add paprika and salt and pepper to taste along with butter. It will brown a bit and give a really yummy nutty flavor.

  • Lastly, mix in the parsley.

  • Serve alongside brauts, schnitzel, or just eat it by itself (like I tend to do)

Hope you enjoy! Let me know if you make it or have any questions!
