When Bronn and Tyrion met with the pyromancer, Bronn said he'd been on battlefields where old men with kegs of pig shit claimed they had the secret of wildfire. He basically called it a load of crap. So whenever Tyrion or Bronn mention pig shit, they are referring to the thousands of barrels of wildfire that they can't actually launch at the enemy without accidently burning their catapults and city down.
