GER doesn't simply rewind time it's even more busted. GER manipulates Reality/Fate/Causality. GER stops any actions/attacks against Giorno from happening. Basically it's an automatic defence against any attack towards Giorno. It's does this by manipulating cause and effect. For example the cause could be hitting/shooting Giorno but GER removes that cause before it comes to effect instantaneously. That's why it's able to deny Fate/reality even though Epitaph (Diavolo's future sight) Projected that Giorno would be killed him. GER was able to deny that fate. Secondly the reason why the arrow rejected Diavolo even though Diavolo got his hands on the arrow first was because the arrow chooses who is worthy. Diavolo was not worthy because he constantly rejected his fate by trying avoid the events of the past. Whilst Giorno accepted his which was why the arrow choose him.

Also the reason Bruno survived is Giorno brought bucciarati’s body back to life, but his soul was in the process of leaving. Normally a soul can’t go back in a dead body, even if the body is healed (see, Josuke’s grandpa and another notable death at the end of part 5). Bucciarati’s determination let him stay in his body, and giorno’s life energy gave the body enough strength to not immediately collapse back into being dead (although it gradually deteriorated over the next couple of days as we can see)

Gotta watch Part 6, the last stretch of episodes in part 6 are the best in Jojo’s. They are ranked the highest too if I’m not mistaken. Part 6 genuinely gets better the deeper you get into it.

The beginning where it felt like we saw the same scene twice / time rewound with Diavolo was just him seeing the vision of Giorno getting the arrow and thinking it didn't work for him. I think the reason Buccellati was able to be a "zombie" was that he was supposed to die from King Crimson - the stone showed a hole in his chest, and then later it seems like more blood came out, like how he got turned into a donut from King Crimson and didn't die, even took a karate chop down his shoulder and managed to stay alive. Then Mista destroyed the stone, changing fate into 3 deaths, altering when Buccellati would die but taking 2 more deaths with him. So Buccellati's time to die was no longer the first King Crimson encounter, so his soul stuck to a corpse. It wasn't just "see, the guys that died were going to die," yea, we saw them die we get it. But it wasn't about that it was explaining why Buccellati stayed "alive" primarily. I definitely think the end stone arc is boring, but I think thats primarily due to it being right after such a climax. But overall I think it was a good way of explaining something that felt like BS at the time.

Rolling Stones showed Buccialetti's destined death in the chapel basement, but due to Mista destroying the stone he changed that fate and that was why Giorno was seemingly able to keep him alive. If the stone was not destroyed all those months ago, Buccialetti would have died in that first encounter with Diavolo
