While I understand the frustration or disinterest in Mai, I think it’s important to remember that at the end of the day becoming a Jujutsu Sorcerer was not what she wanted. It’s easy to forget because it’s animated, but these curses are terrifying beyond human comprehension. Not only that, we’ve already established that sorcerers and regular people alike face the most gruesome and painful deaths from curses. Even Gojo had said in an earlier episode that finding someone torn apart and mutilated was the better deaths. (Which makes me scared to think about what could be a worse end than that?) Mai and Maki come from a clan where performance is demanded. From what we’ve seen, Mai doesn’t seem to be the strongest which isn’t completely her fault since we know that, per Gojo’s words, Jujutsu is a hereditary talent. The poor girl was dealt a pretty crappy deck and is still forced to put her life on the line. Can’t really blame her for her attitude or abilities.

Youre forgetting that along with her whole life being dictated by her sister's actions and petty family, that her technique is being used to its fullest extent for the moment. Gojo discussed the difference between cursed energy vs cursed technique. She can't really change too much of it, she was born with that limitation of cursed energy output despite its incredible ability to create matter from nothing. Utahime sensei last episode already confirmed that one bullet (or mass equal to that size) is her limit in a day and so by using a revolver she can at least have control in a fight to bluff when she might use it. So she is being smart about it, she just lacks the motivation to improve in other areas. Like imagine you were forced to put your life on the line everyday with the possibility of having to watch your friends die every time and witnessing death all around you. You'd grow to be jaded, bitter and spiteful. Also last episode you might have missed it but in the flashback the elders said that twins are considered bad luck and Mai also pointed out the heavenly pact that Maki has from birth. I don't think you guys really realized the importance of the heavenly pacts, mechamaru was also an example of a pact from birth. When Maki was born instead of having a technique she was given supernatural strength and agility. But as a twin (no spoilers) there has been many theories on how this may have also affected Mai from birth vice versa.
