The reason Tony wouldn’t do it is because messing with time could create temporal paradoxes or completely break the fabric of space time. Meaning, it could shatter the laws of physics and send the universe into chaos. It was more likely that they would destroy the entire universe as we know it than actually succeed. It’s also just impossible to reverse because time is 1 dimensional, it only moves forward. So in Tony’s mind, it would’ve been as productive as trying to turn a rock into water. It’s pointless. (Or at least the laws of physics say it is impossible)
