Ingredients:

  • 3 cups of medium grain rice

  • 1/3-1/2 cups of rice vinegar

  • 2 containers of Spam, preferably the less sodium variety

  • 2 packages of those snack-sized nori

Prep:

  • Thoroughly wash your rice using a fine strainer like you'd use for sifting flour. Cook the rice according to the instructions on the bag or your rice cooker.

  • When finished, pour rice into heat-resistant mixing bowl, add in rice vinegar and fluff/mix until incorporated. Then spray down a sheet of parchment paper on a baking sheet and thinly spread rice. Cover with a sprayed sheet of cling wrap and let cool in the fridge for at least 2 hours, preferably overnight

  • Use a kitchen turner to split spam cubes into 6ths, yielding 12 spam patties. Cook on medium heat in a cast iron pan until they outside reaches the level of doneness you prefer. set aside onto paper towels to let drain.

  • get a musubi press (or just use on of the spam containers) and pack 1/2 cup of rice and a slice of spam into them and press using the sprayed down clip wrap as a buffer between the food and the press. It also helps a lot if you spray down whatever you're using too so that the rice easily comes out after you portion it.

  • fill a wide bowl with drinkable water and let strips of nori soak for no more than 15 seconds. drape the now softened nori over the cling wrap and musubi press and then put the pressed rice and spam spam-side-down back into the press. press again.

  • repeat until all musubi are made and then wrap whatever you aren't going to immediately eat with more cling wrap. store in the fridge.
