“Sanma”, which is what they use in this show, also means “Autumn Knife” in Japanese I believe.

Firm whitefish, especially cod, poached in milk is a classic. Also, I think you forgot about chowders, pretty much every fish/seafood has been made into one. As to what pairs the worst with fish it's really hard. I mean I love blueberries with salmon, I wouldn't exactly want them with sardines or dover sole. Sweet fruits might be the hardest one to pair, but it's not impossible.

I still buy smoked kippers on the regular. Kippers on toast, or fry em up in olive oil, garlic, then toss in a butter sauce with some pasta. Or same but simmer in a red sauce serve w/some pasta. On the aging thing I have done it in a small bar fridge I used to have. As long as you can set temp approx. 35f/2c or so, got a good evaporator motor, to keep condensation/moisture down, and I put in a small battery powered fan for air flow as that was the easiest solution. Modified the racks slightly so I could hang em high, or I also aged a cut completely covered in salt or butter. I have seen people saying you could use a dehydrator as well but I have never tried that, I have only made jerky in one or tomatoes (which are actually better dried outside in the sun which my gram used to do).

I was going to mention chowders as well. I actually like them flavor wise but milk broths mess my gut all up so I avoid them.

I'm lucky in that dairy doesn't upset my gut but I did start having reactions to shrimp when I was about 35. So now whenever I want to eat them I start with an appetizer of benedryl.

I do like fish, with enough sauce and stuff on the side, mostly citrus on it. Spinach as a side is nice. Not a fan of tuna, I don't get how people put that on everything, cold and warm. Pickled herring is quite prominent here, the variant it has it's own word: https://en.wikipedia.org/wiki/Rollmops - There is one way to make it disgusting though: putting it in gelatine to form a tart, horrendous. Everything the show did with fish so far has been excellent, aaand now I'm hungry again. The story structure is milking the build up, oh boi. I've been meaning to ask, have fans collected a full list of dishes done in this show?
