The pickle juice/cream thing is just what acid does to milk. There's actually a very nice dessert called posset that's basically just cream, sugar, and lemon juice, and it sets up into a pudding because of that weird little chemical reaction.

Dan's reaction to the pickle reminds me of my little brother's reaction to his first time trying a warhead candy. He was probably 6 or 7 and we were walking back to the car with our mom. My brother just drops to his knees and is just frozen there with a look of horror on his face, completely unable to comprehend the amount of sour now pulsing through his system. Still the most dramatic and genuine reaction to food I've ever seen in person.

Correct! This is also the premise behind the Cement Mixer, which is made with irish creme liqueur and lime juice. The acid makes the dairy proteins denature and thickens the whole thing to a stiff yogurt-like consistency, but with the Cement Mixer you're meant to shoot the whole thing and slosh it around your mouth. Disgusting texture but not bad as a flavor, kinda like smokey key lime pie filling.
