The language is Chinese. The lore in the show is that the last two superpowers were the United States and China. So English and Chinese became the standard. Also, gets past the censors with cursing. This is why, when you see the Alliance crates, etc. (Train Job), they have a combination of American and Chinese flags on them. Another easter egg that connects Firefly to Alien. In the pilot episode, when Mal is firing the anti-aircraft platform in the HUD, you can see the Weyland-Yutani logo. There is also a connection to Battlestar Galactica. Love in the episode that Mal became the dad that comes back for them.

you can find translations of the Mandarin on fan sites. it's mostly cursing, lol. a funny easter egg: Nathan Fillion starred in a detective series Castle after Firefly. In one scene, he speaks Mandarin, surprising his partner. she asks him "semester abroad?". he replies - "no, a TV show I used to love" love reliving this show, one of my faves ever.

The phrase River says in Mandarin at the beginning of the episode basically translates to "Stupid son of a drooling whore and a monkey". And you'll occasionally hear Simon call River "Mei-Mei", which means little sister. Love these Big Damn Heroes.
