You probs know by now cause I'm telling everyone that'll listen that I'm trying really hard to look after myself better. THE WORST PART about being an adult is deciding what to eat and cook every single day. We're always having the same things 😭 so if you please, could you comment some of your favourite recipes!! Don't worry if it's foreign (to me) foods or measurements, I can easily convert or find subs. Even just a title would be nice so I can google. Getting a bit sick of chicken and veg 😭😭😭

We had cod fillets down with home made breadcrumbs and cheese with olive oil cooked in the oven with homemade wedges made in air fryer. Oh and homemade tartare sauce.

I've recently discovered mixing Chili Cheese Fritos and a couple of chicken nuggets to a Banquet Chicken Pot Pie is friggin' awesome! 🤘

My absolute FAVORITE since I was a kid: brown a pound of ground beef and drain it. In a separate pot, mix 3 cans of Cream of Chicken Soup and 3 soup cans of water. Once it comes to a boil, put in 3 cups of Minute Rice. Add 2 tablespoons of soy sauce. When the rice is cooked mix in the ground beef. You can do 2,2 and 2, or 4,4 and 4. Just make sure the same number of cans and cups.

As a stereotypical middle aged obese American man that lives alone and survives on a diet of processed food and microwave dinners, I don’t think I can be much help for you on this one.

You should get a copy of the book “The UltraMind Solution” by Mark Hyman M.D. All about diet effecting mental and physical health. Many great suggestions and recipes.

Or grill a ribeye steak, dice it up, and mix it with beef tips and gravy and rice! 🤘

I like to make a simple taco salad with seasoned ground beef, shredded cheese, lettuce, salsa, sour cream, black olives, Catalina dressing, and tortilla chips.

This is so cute and I support this a thousand percent! Please look after yourself, Dawn. ❤️

Pad Thai (super easy to make), Cauliflower and Potato Curry with jasmine rice, chicken broccoli casserole (comfort food! Lots of cheese...), stuffed shells with ricotta and basil, stuffed bell peppers (rice, shredded chicken, tomatoes, a bit o' cheese on top), shrimp or chicken picatta (angel hair pasta, shrimp or chicken, lemon zest and juice, capers, and white wine...sometimes I throw artichoke hearts in there, top with parmesan..omg.)

Dag Einar Bergli

Tenderloin of pork with jasmine rice, veggies and pepper sauce is a current favorite of mine. You sear the pork on both sides in the pan first and then cook it on 150C for about 25 minutes in the oven.

Louis Marzullo

LOL, I just left you a recipe for stuffed peppers on Discord a couple days ago! Good timing!

High protein, moderate to low carbs . Bread , pasta , dairy are all unhealthy . Don’t eat anything with added sugars . Chicken , fish , some red meats , white rice , salads , broccoli. Many fruits are high in sugar . Bananas are good . Good hydration is a must . Try to drink a gallon of fluids throughout the day . Stay away from soda with added sugar .

Billy B

Air fryers are a game changer .

It's only recently I finally figured out that frying fish fillets isn't that difficult. 1. Use a non-stick pan and/or a generous amount of oil 2. Do not use excessive heat 3. Crucially, pat the fillet dry or apply a generous amount of breading or flour. 4. Only turn the fillets over once, no more.

Air fried lamb chops with mashed potatoes, peas and gravy. I prefer my lamb chops to be cooked well done with a bit of crisp to it so depending on size I'd do 8-10min on each side. Season with just salt, pepper and garlic powder. For mashed potatoes I add thyme, salt, pepper, garlic powder with butter and either milk or cream for the consistency of your liking. Season peas with butter, salt & pepper. Simple but gooood!

Happy Hanukkah

What's been holding me back from getting one is: (i) The "portion" size for any reasonably priced one is quite limited (ii) Cleaning it seems difficult.

FYI Patrons. The Breakout Role poll is almost over. It down to Conan and Big. If you voted for anything other than these two and want your vote to matter, you may want to get over there before the top of the hour.

Here is a simple chicken noodle soup recipe (American measurements) I often make when I am lazy and only what to use one pot. Bring to boil 2 14 ounce cans of chicken broth on stove top. Then add one cup of eggs noodles. Cook until egg noodles are done to taste. Then add one 4 ounce can of chicken. Makes enough soup for 2 people and taste much better than canned chicken noodle soup.

I'm into chili this time of year, thought I'd throw something like these at you: https://denvergreenchili.com/recipes/soups-and-chilis/pork-green-chili/old-fashioned-colorado-green-chili/ Something to keep in mind on this one is that you need hatch green chiles when it calls for green chiles, which is kind of implied in Colorado hence the lack of specificity. Either of these would work as a baseline for a bowl of Texas red (modify as you like, especially when it comes to their proprietary spice blend they try to sell on the last one): https://beeflovingtexans.com/recipe/texas-red-chili/ https://www.meatchurch.com/blogs/recipes/texas-red-chili Meat Church's recipe has better instructions for preparing the chiles and how/when to blend things.

In our college town, InstantPot steam/slow cookers disappear off the shelves every September, with all the cooking-illiterate students getting their first apartments. They’re not only great for quick meat, vegetables and/or rice, the regular versions also double as slow-cookers that can make homemade soup in an hour— And there is a whole list of recipes, of which split pea is my own favorite. 😋

Two meals that was created on cattle drives for the cowboys to eat is chili and slowly smoked meat. Everyone has their favorite recipes that they say is the best you have ever had, so you can play around with any recipes you find online that fits your taste and still be real cowboy food

I put the baskets and pull out racks right in dish washer. Yes limited size . I only cook for myself .

Eliminate sugar. Switch to a salt substitute. Reduce your portions a bit. Juice one or 1/2 a lemon into a glass of water every single morning first thing. Use olive oil. Salmon is really healthy and easy. Pan sear or bake with veggies like zucchini and carrots. Baste with lemon or orange or sherry or soy sauce or bbq or honey mustard. Roast a big pan of quartered red potatoes with red and green pepper, carrots, onions and garlic and curry powder. That will last a couple days. I have an air fryer so its real easy to make a batch of hard boiled eggs and have them as my snack with mustard and pepper. Baked panko chicken fingers are super easy and great for dipping with ranch or bbq or hot mustard. Acorn squash is super easy. Cut in half, scoop seeds and place cut side down in a tray of a little water and bake. Scoop out and mix with brown sugar and butter. Turkey sloppy joes are easy and fun. Risotto is actually really easy and will last a couple days. Pork loin is easy. Wrap it in foil with orange or apple slices and fennel seed and thyme and bake. I make mini pizzas with Boboli bread so I can control the amount of cheese and salt - some spaghetti sauce, oregano, turkey pepperoni, zucchini, mushrooms, grated cheese or whatever.

I also generally only cook for myself (and follow some of your previous recommendations), but I'm not big on portion control. :-) In addition, no dish washer. (None of what I wrote is meant to put down air fryers, with their obvious benefits.)

potato soup with spicy sausage

My original meal prep was: 1. prepare grilled tri-tip roast beef 2. drink Cadillac margarita 3. prepare garlic mashed potatoes 4. drink Cadillac margarita 5. prepare corn on the cob 6. drink Cadillac margarita 7. prepare ceasar salad 8. drink Cadillac margarita 9. prepare banana pudding cheesecake 10. drink Cadillac margarita I eventually switched to a simpler method. It's the same as the above one, but I eliminate the odd-numbered steps. 🥴 I'll acknowledge this might not quite fit the spirit of Dawn's request. :-)

Arugula salad with extra virgin olive oil, balsamic vinegar and smoked Kalamata olives, chickpea salad with diced onions & grape tomatoes, and bowtie pasta in pesto sauce.

Not a recipe, but a story. Recently, my doctor was concerned about a rise in my A1C (approaching pre-diabetes). I had been drinking diet soda (it seems too much of it). It seems that the sugar substitutes are little better than drinking sweetened drinks. I switched to water, but it's flavorless and boring. So, I switched to club soda (flavored) and the A1C decreased - doing much better now. Best of luck to you.

Seared beef tenderloin and asparagus. Tying the tenderloin might seem intimidating at first but it's pretty easy. After 1 or 2 you won't even blink. And it's really delicious medium rare with some horseradish sauce. Surf and turf. I like to make some shrimp scampi and a small steak, maybe NY strip. So good.

This is in my wheelhouse. I'm a homecook Baked Mac and Cheese https://www.onceuponachef.com/recipes/mac-and-cheese.html#tabrecipe Straight forward recipe, and fairly user friendly. I usually make a half recipe in a 2-quart (8x8 inch) baking dish. Favorite modification is to sub crushed ritz cracker for the panko, and to stir in 6-8 slices of cooked, smoked bacon and a couple seeded, chopped jalapenos before baking (after seeding them they barely have any heat). I imagine you could use rashers too. Hard to knock ham and cheese. Japanese Chicken Curry https://www.justonecookbook.com/simple-chicken-curry/#wprm-recipe-container-59001 Also straight forward, but the prep takes a little more time. The recipe features another linked recipe for the curry roux (the thickener), but it gives the option of using an off the shelf version. I like their roux recipe because you can control the amount of heat you want, including choosing none (1/2 teaspoon of cayenne is very spicy if you're not used to it. Would start with 1/8th if you're nervous). As for modifications, it's perfect as is, but I always change the protein and use beef instead of chicken. I usually have leftovers with a chicken cutlet on top (katsu curry), and so the beef is a nice flavor contrast. I imagine lamb would work great too. Eggplant (aubergine) Parmesan https://www.alisoneroman.com/recipes/eggplant-parm https://www.youtube.com/watch?v=q6uauA-RY2Y Good as is, I don't really mess with it. But the included vid uses more anchovies in between layers, and I think the anchovies in the sauce are enough. If you like them, go for it. The recipe also calls for fresh herbs, but dried work too. Bread pudding https://fantabulosity.com/last-minute-bread-pudding/#recipe Because everybody needs a dessert. I've made it as is, without the raisins or the sugar sauces, and it's great. But if ya have some raisins or currants that you need to get rid of, along with some old bread, it's a great way to use them up. Tastes good fresh out of the oven, and even better after it gets cold. Highly recommend.

This heavenly-sounding meal can be for Dawn's "cheat" day. I think I would order it in a 'last day on Earth' situation! 😄

I use Allrecipes.com thousands of recipes. Sorry about last post. Having a thunderstorm and computer went off.

There's also a recipe for potato & cucumber salad with dill & mustard on that same page with the stuffed peppers if you scroll down a little further. And find as many recipes based on the Mediterranean Diet online as you can!! 💖

Anyone have good luck with any of those home-delivery meal prep kits? If yes, which one(s)?

Movie suggestion. Big Night. You can learn how to make Timpano. 😛

Don't know what preferences the rest of your household have, but if you've never done bouillabaisse (fancy name for seafood stew), you're missing a healthy, versatile meal. Use just about any seafood, with or without potatoes or veggies and as mild or peppery as you like. Basically, everything in a pot with a bottle of dry white wine, and you feed a whole crowd. https://familystylefood.com/julia-childs-bouillabaisse-recipe/

I'm an odd person with weird eating habits maybe. So I make ramen. I boil 1.5 cups water by microwaving in a 4-cup pyrex measuring thing, it has a handle and a cover. In it I put vegetables that can take boiling like bok-choy or even squash, even collard greens or that type of greens. Then you'll need some kind of meat, any kind, like a sausage or something, could be bratwurst, chunks off a rotisserie chicken, meatballs? You might want to brown them separately. Oh I take soup stock, shelf stable in a carton, and pour that in there so it was maybe half water, half stock. Heat it again a bit. You'll need the ramen noodles, dried or fresh, in whatever package you get them in. I guess you can put them in for the 2nd heating as long as you know how long it takes which is not much. I like to eat it off the giant pyrex cup which has a handle. There's as much room in there as a large ramen bowl from a restaurant. Put in the meat, oh I add a hard boiled egg. Personally I also have double walled vacuum insulated mixing bowls and I just put the whole pyrex mug in there, it's a nice fit. Season to taste with your ramen type seasoning. I use a ramen spoon which looks like a small ladle. I like soupy foods with a lot of broth so there. At a ramen restaurant I work on the broth but I think normal people eat the noodles and they leave the broth. This will make 2-3 cups of a ramen meal, might be too much. (Note - for those who know how to make actual ramen, it takes 2 days so this is not that, this is the 10-15 minute version.)

Chef John has some winners, but I usually get a recipe idea on youtube, and then google it. Then I go for the one that has the highest rating with the most reviews. Out of a hundred or so recipes I've tried, this approach has only failed me once or twice. Things are loved for a reason.

Louis Marzullo

Lol, I didn't! In fact, after I wrote the comment I felt stupid because I was like "Where the hell am I going to order this from?? I'd have to go to Celeste's house!" 😂 But now it all makes sense!

Mannygogou

I had trouble drinking plain water myself until I figured out I can get them real cold in a freezer that's not set to freezing, so it's as cold as ice and now much more drinkable. I slip the 16.9oz plastic bottle in a stainless steel vacuum insulated mug, it fits nice and it will then stay cold for 2 hours. Weird idea, I think the body thinks ice cold water is food (not water).

Louis Marzullo

Hey Dawn, so sorry you got such a poor response to your request! Guess no one likes you very much! 🤣

Mannygogou

I have a rice cooker and you can cook food in it as well, it works like a slow cooker. I also have the Instant Pot. As an aside I've been looking recently for a rice cooker that will keep food warm for 4 days without going bad. 24 hours is pretty good while an unintelligent one will do it for 4 hours.

Mannygogou

wow, tacos are pretty good! In the country I live in, ahem, we have Costco and they sell "street tacos" which comes in a tray with all the ingredients 🙂 You make your own soft tacos... I don't know, it serves 4 maybe?

Mannygogou

I got an air fryer and I stopped using the stove for months! Technically I had a toaster over that does air frying too but I got that small one with like a basket. I got one with low wattage for use when traveling, but I also got one more normal. I daresay you can cook or reheat almost anything - and it's not a microwave. To clean I heat it up a little and use a paper towel with tongs to wipe it up. The non-stick surface cleans up easy... except for the tray part maybe.

Louis Marzullo

Thank you for the invitation! Love to, someday. Can you guarantee my safety if I walk in wearing a New York Yankees cap? 😄

Chicago Artist Jon

Yeah. She has an internet army at her immediate command. I think if she wanted someone disposed of that person would not see the sunrise. The Power! Dawn Coreleone.

Tex-Mex street tacos,I like a fresh fried corn tortilla,Carne Asada or Chili Verde-Carnitas Pork with Monterrey Cheese & Cilantro! :)

For a Filipino dish, everyone loves "chicken adobo." You can look up how to make it. As for the healthiness/unhealthiness of it I can't vouch for it. I've never made it myself. I've baked empanada before though. Now that might be a nice suggestion, they're yummy. Described as a type of baked turnover consisting of pastry and filling - maybe with meat and vegetables, potatoes... and put some raisins in there. With flaky crust, awesome! Also chicken pot pie!

James B.

With Filipino, pancit is my jam. Lumpia are good too. Adobo is good, but I'd warn against making it in a seasoned pan, like cast iron. The vinegar can chew through it.

Mannygogou

Wow pancit! I forgot that, it's most awesome! There are different versions and are all good. I like squeezing a lot of lemon on it. Often it's overshadowed by other dishes but on its own it's epic somehow.

Louis Marzullo

Dawn, can you throw one of these 'community discussion' questions out there once a week? I don't care if it's "What brand of laundry detergent do you use?" 😅 Does my soul a world of good! ✨

Ragnar Miersch

All this time I just assumed that Miss Dawn was the consummate homemaker, supremely adept at all the intricacies of family rearing and sustenance. As it turns out, she is just as big a loveable goofball in the kitchen. Now you all know how much I simply adore her so please take this with a grain of salt. Why in the name of all that is holy would she need us to tell her to use the internet to find recipes. I mean we all know from watching her western reactions that she loves cattle; did she not know that people eat them....a lot! And remind me, isn't Scotland surrounded on three sides by water and full of bonnie lochs, fish should be pretty abundant, and most people should know about them. And don't get me started on mutton (sheep, I hear they're pretty well-stocked in her country), pork (cute little piggies) and fowl other than chicken. Maybe a duck now and then to change things up, or a goose, or even a few Cornish game hens. No, I think this is just Dawn winding us up to see if we really care enough about her and hers to actually help. So good to all my fellow Patrons who stepped up and did so. Your hearts are in the right place. As for me, in the spirit of giving and spurned on by all of your generous responses, I will share my favorite recipe as well ...M & M's. Hey, at least her kids will love me.😃

Simon

I think you're ignoring the benefit of community 😊 As much as I can ask the internet for things, I like recommendations from people who care about me much more.

Ragnar Miersch

My comment was a work of pure satire, Simon. With that said, I am sorry if you felt offense.

Simon

I'm fond of making Swedish meatballs and having them with veg, lingonberry jam and a creamy gravy. Made a nice vegetarian pasta the other night - chickpeas, onion, capsicum, a small amount of jar tomato sauce, and a splash of champagne. I always like Dutch oven goulash (beef, red wine, a can of Guinness, red capsicum, paprika, beef stock, Worcestershire sauce). Veg and mash. Short prep, long cook. When it's out of the oven, add half a cup of cream.

John DiGiantomasso

American Cattleman's pie: Brown ground half kilo (minced) beef with a chopped onion and a couple cloves of minced garlic, salt & pepper to taste. Drain. Toss in two cans Campbells Condensed Tomato Soup, and two cans cut green beans (drained). Mash some potatoes (or use instant.) Pkace beef/soup/beans mix in large oven suitable container. Cover with mashed potatoes. Cover it all with shredded cheddar or other favorite cheese. Bake long enough to make cheese all melty (350°F) for 15-20 mins) Spoon into bowls and serve. Yummm!

Louis Marzullo

🤯 Peppers! Next time I go to the San Gennaro Feast in Little Italy, I'm going to order a sausage sandwich with onions & capsicum & try not to get punched in the mouth! 😂

Robert Nelson

I love tinola manok (ginger chicken soup) served over rice. Ingredients should be easy to find.

Robert Nelson

I could give you my mom's recipe for chili, but then I'd have to cut your head off and put it in a safe.

Louis Marzullo

Reminds me Dawn needs to see more Warren Oates & "Bring Me the Head of Alfredo Garcia" sounds good right about now! 😁

Dawn lovely was in the same boat as you chicken all the time drove me up the wall. You can't go wrong with steak. Nothing beats a good steak and chips with mushy peas. Well technically you could beat it if you want it tenderising I suppose. Lasagne with some mature cheddar on top. Cottage pie, Shepherds Pie (obviously I don't suggest cannibalism! dont use real shepherds). Loads of Veg with them. My late mother used to get chicken breasts and slice them in the middle and fill it with philidelphia cream cheese. Then rap them in bacon lashes. Then serve with whatever veg mash, peas, carrots etc or chips for the kids. Got a dustbin lid sized Cheesecake for your treat the god of all deserts. If we could live and they were good for you I'd eat cheesecake 24/7 for the rest of my life.

Girl! The EASIEST TACO SOUP recipe in the universe! Wonderful topped with shredded cheese, and sometimes I crumble my Fritos corn chips in with my bowl or eat them along with it. I’ll give you the large recipe and you may 1/2 each ingredient if you want to scale it back. 👍🏼 TACO SOUP 2 lbs ground beef/chuck (cooked and drained) 1 large onion (chopped) 2 packets taco seasoning mix (original or mild) 2 cans dark red kidney beans (drained) 2 cans chili beans (w/sauce) 2 8oz cans tomato sauce 2 cans Shoepeg WHITE corn (the small white corn is much better but I have used reg whole kernel in a pinch) 2 cans Rotel (diced tomatoes with green peppers) original or mild 2 cans Cream of Potato soup (Campbell’s is best) 1 reg size can Beef Broth Mix it all together in a large Dutch oven-type boiler. Bring to a boil, stir, and then simmer. AVOID high heat. Stir occasionally to avoid scorching. Ready to eat after simmering for 30 min or so. (You can also freeze this for a quick meal anytime) Hope you enjoy!! I’ll try to put up a few more. 😊

I'm no cook, and mostly now I do pre-processed things like commercially prepared meals, and such. But the only dish I can claim to have co-created (with my college roomie) was a mix of whatever happened to be on hand on the shelf one desperate we're-dead-broke-what-do-we-have-in-the-house evening, and it turned out to be surprisingly tasty. Mac & Cheese & Tuna & Peas We had a Kraft Macaroni & Cheese kit, which we prepared per instructions, then stirred in a large can of tuna, and a large (15oz.) can of garden peas. (Green Giant Baby LaSeuer peas are good, especially the variety that has pearl onions and mushrooms mixed into them. YUMMM!!!) There are other brands of Mac & Cheese kits you may prefer, or you can make from scratch if you're able (we weren't). Of course, this is a variation on a tuna casserole, really, but we found it tasty enough and cheap enough on our college budgets, and easy enough in our inexpert level of cookery, to make it a frequent repeat.

Manny

Okay....the Sheriff Department sent us kitchen deputies to cooking classes so our vendors would stop doing us over. I'm going to give you meals designed for a family of 5. Here is a (Nottingham) Romero family roast chicken recipe that gets bragged on. 1...yep...Chicken for roasting. The night before: Melt

Manny

FK! I accidentally sent🙄

Manny

Okay...55ish gm of Salted Butter, melted, as soon as it's melted take it off heat and add a pinch of Garlic powder, pinch of Salt, 1/2 teaspoon of Rosemary, 1/2 teaspoon of Paprika. Now the tedious bit. Take 2 Satsumas, skin them so you get as big a pieces ase you can, then take a paring knife And "skin" away the pith...(the white stuff) so all you have left is peel. Cut the peel into teeny strips put it into the melted butter as well as the juice from the Satsumas. Stir it and then pour it into any kind of small bowl and refrigerate over night or it's sold enough to cut. Now your going to cut pieces of butter and stuff it between the skin and meat and roast till done. Serve with the usual suspects (veg)

Louis Marzullo

I miss tuna casserole. It was such an American staple of the 70's, then weirdly became a culinary pariah. Who decides these things?? It was so tasty & satisfying, especially during winter. My sister made a mean one, when us Catholics were still observing meatless Fridays. Ah, the reverie!

Simon

Oh, sorry Louis! Old habits die hard. I think they're called peppers in Scotland as well so it's a good catch. In Australia if you ask for peppers you'll get jalapeños 🤣

Louis Marzullo

Whole grain pasta of your choice, cooked 'al dente' (of course). After draining, return pasta to pot (leave a little pasta water in pot), throw a nice big chunk of margarine in there & mix around until margarine fully melted. Then pour on the low-fat parmesan grated cheese & black pepper to taste (pinch of salt, if you like), mix it all up with a big wooden spoon & MANGIA! If it's a cheat day, regular white pasta, butter & regular parmesan to put a great big beautiful smile on your face! Kids should love this one, too. Not sure about the black pepper for them but essential for the adults.

Louis Marzullo

😂 I love the fact that one couldn't guess in a thousand years that they're the same thing!

My favorite (imperial measure): 😋 - 1/2 lb. Stew beef, cubes cut small 1/2 C. chopped cabbage. 1 onion chopped 1 carrot chopped 1 stalk celery, chopped 1 can sliced beets, WITH juice 1/4 C. Frozen corn 2 C. Beef broth 4 C. Water 1 Tbsp. Red wine 1 Tbsp. Vinegar 1 small can tomato paste 1.C. Dry tortellini Basil, garlic, parsley to taste Mix broth, paste, wine and vinegar in bowl. Bring meat, vegetables, water, spices, and broth mixture to boil, in large pot and simmer, covered, 30 min. or until beets turn clear. Add tortellini and simmer additional 20-30 minutes. [InstantPot users, use Soup setting, add pasta and simmer additional 20 min.]

Tuna salad: Open a can or two of tuna. Drain out liquid. Break up fish in a bowl. Add mayo, seeded mustard and yellow mustard. Add sweet pickle relish and dill pickle relish, and a touch of pickle juice of choice. Chop celery and mix it all together. I like to add capers, but that increases the sodium content. Now you have tuna salad to put in a sandwich, Add to a green salad, or eat with crackers. No measurements are given because all measurements are to taste. The consistency matters. Not too dry or too runny. Enjoy! Sometimes I dice cheddar cheese and mix that in, too. You can use the same ingredients, but replace tuna with canned chicken for chicken salad. With chicken I add carrots chopped or grated.

Michael S Schultz

When I was married I did all the cooking, and had to get dinner on the table w/in a half hour most weeknights. So I picked up a lot of quick-meal techniques. You can do a chicken fricassee, and that is very easy and versatile. You need a chicken cut into 8-10 parts (2 wings, 2 thighs, 2 legs, 2 breasts – if the breasts are very large, cut them in half). You need some vegetables that impart flavor, but which you will (probably) not eat – onion or shallot, garlic, maybe ginger, herbs like thyme or rosemary, celery, carrot, tomato, etc. 1) Brown the chicken – can be oil, butter or both. Nice and hot, but not so hot the butter browns. Let the chicken sit for a few minutes, don’t move it around. Make sure you get a nice brown skin. Then flip it for 2-3 minutes 2) Put the vegetables in the pan. For a first time, onion, garlic and celery are perfect. You don’t need to chop them small. Peel onion and cut into quarters. Chop celery in 3-4 pieces. Smash garlic you don’t even have to peel it (though best if you do). You want things in big chunks to strain them out easily. 3) Add herbs if you want. 4) Add some sort of flavored liquid. Wine is best, white or red (you choose). Sherry is good. Sake or rice wine for an Asian flavor. Broth. You will experiment later. White wine for a first try. 5) Cover the pan, set to medium-low heat, and let it cook for 20-25 minutes. 6) Preheat your broiler 7) While chicken is cooking, make rice or noodles, and prepare side dish if you want (or just a small salad) 8) At the end, take out the chicken and run it under the broiler to crisp up the skin 9) Strain the liquid in the pan – you will be left with a yummy sauce 10) Pour the sauce over the chicken or serve on the side Super easy. Brown the chicken, throw veggies and liquid in the pan, let it cook, broil the top of the chicken and strain the sauce. You can change the flavor profile and have different meals. Try Chinese rice wine and soy sauce, with bok choy, garlic and ginger Try red wine with oregano and basil, garlic and onion and fresh tomato Try sherry with carrots and rosemary and peppercorns Etc. Technique is the same, different flavor profiles

Marcella Hazan's quick and easy Marinana (make ahead and freeze for later). 1/3 cup Extra Virgin Olive Oil. Heat it, and add half an onion (chopped) and 1-2 garlic cloves (chopped). Saute 3-4 mins on medium heat. Pour in one of those big (28 oz) cans of crushed tomatoes. Add salt, pepper, basil and oregano (dried). Simmer (!) for 15 mins. Poof, it is done. You can buy jarred marinara but it is so easy to make it I usually just either get a pot going or make it in advance. I used to do a parmesan dish with pork instead of chicken or veal. Get one of those pork tenderloins and slice it, the *pound* the pieces flat between two pieces of wax paper. Dip in flour, then egg wash (beaten egg + water to thin), then bread crumbs. Saute in olive oil. Put browned pieces in large baking pan. Pour marinara over and sprinkle with parmesan. Back at 400 degrees for 20 mins.

We should start a "When I Was Married" club... 😐

Sourdough toast with vegemite, avadado and poached eggs on top. Spinach and bacon on the side.

Louis Marzullo

If I put the spinach & bacon between the 2 slices of toast with the 3 other ingredients, would I be banned from Australia? 😄
