About albedo's true form, many people say she is already in her true form. But Everytime she gets into fight with shaltear, Albedo calls her a Lamprey and Shaltear calls albedo a Big Mouthed Gorilla. I think she was called that way multiple times. Shaltear looks like a Lamprey eel in her blood frenzy form. So fans theorized Albedo could possibly have a Gorilla or similar looking form. Also the creator of Albedo loves contradictions within the attributes of the characters he created. Beautiful Albedo with ugly personality, but maybe he gave her an ugly form as well. Who knows... But i definitely don't want to see her in a Gorilla form.

the thing the anime didn't explore is that the fact Ainz made sure to put a LOT of gold BEFORE they enter.. his idea was like "If they just wanted money, they can take what is at the begining and leave.. If they are greedy tho, they will continue".

Well, it is never confirmed what her second form is, but yes. The prevailing theory based on Shaltears comments and other hints is something like Nalfeshnee.
