Yup I must give props for whoever's giving this a go with this pace. A lot of adaptations will skip a lof of things and try getting fast big hook. This one is trying to hook you little by little while also giving justice to all of the characters

The romance stuff in this episode is leftover from when the series just started and didn't know what it wanted to be yet. Don't expect much in terms of romance any time soon. At least not for Myne.

Yes Bookworm is slow, but it is so intricate and detailed. All of the world building that is happening now stays relevant and is plot important throughout the entire series. The light novels are obviously able to flesh things out more than a low budget series can, but I think the anime still does a great job of capturing the heart of what makes Bookworm special.

It would actually be really easy to fix the bathroom problem with the housing stacked like this. Just create a central chute and place toilets above each other with an angled chute leading to a central chute that empties to a large hole under the building, and create a trench from the hole to the gutter. Cleaning it might be a bit tricky, but you can just leave it open at the top to vent it and use rainfall to help wash debris down. This is similar to systems used in castles where they would empty into the moat
