I'm going to miss exploring the world and its mysticism and beauty when we return to Z! The idea of seeing young Goku's training was always an aspect I really enjoyed!! What Dragonball fan doesn't enjoy a good training session? I think watching the original series really helps contextualize scenes like Vegeta fighting against Goku Black and explaining to Zamasu how Goku's body was built from a literal lifetime of battles and hard work! Baris was definitely right that the idea of the training here was to help Goku tap into his "sixth sense" and not necessarily about sensing ki! It's about trusting in your understanding of the things you aren't even aware of! Or in other words trusting in one's gut or "instincts", if you will! As for my favorite transformations, I'd probably go with Goku's Super Saiyan 1, then Ultra Instinct, and then Super Saiyan 2 Gohan!

Roshi and goku have both shown the ability to sense large powerlevels and ill or good intent, now he is learning to sense all of his surroundings, as shown with popo using the optical illusion, him trying to sense the cat, and him senseing something like lightning. I also dont know if you noticed but the second time Popo flicked a walnut and goku was trying to be "as a stone", he managed to dodge even the walnut. Gohan learns this technique far later in dragonball when he fights the wolves in the preliminary tournament before the T.O.P, by bouncing his Ki off of the wolves that they are unable to sense. Nam used this skill when he dodged gokus afterimage technique in the first martial arts tournament aswell. I would think that piccolo knows this technique too already just because namekians and kami are already inherently super monks lol.

10:00 they actually did use it in Z, during the saiyan saga where krillin tien and chaotzu were facing the hologram saiyans of the past but they never used it after that

Answer to one of your questions: the pendulum room actually was used in Z during a Saiyan saga filler episode when all the Z fighters were training at the lookout. All the Z fighters (except Goku who's dead) get transported to an alien world and fight 2 Saiyans. the room itself is also not canon at all btw. Both times it shows up in the story are filler. We actually don't see much of Goku's training at the lookout at all in the manga.

Goku already had a sixth sense of being able to sense things that were super far away as early as when he first met Kuririn, and he knew he was coming somehow. There was also that time in episode 4 where Goku said he could feel people's presence when they were hiding from Oolong. It was a good filler episode I suppose.
