A couple of things : - We've been introduced to Pekom's abilites at Fishmen island, he has a Zoan-type Devil Fruit that allows him to transform into a full turtle and a mink-turtle hybrid at will. His turtle form gives him a protective shell around his torso. That's how he was able to tank some of the bullets that Capone shot at him. - "And maybe we even learn why they are afraid or have a beef with the samurai" They actually reminded you why in the last 2 minutes. It's simply because Jack has just caused havoc in their country looking for one, so our crew don't want to tell the minks that they have 3 samurai with them, that would not be a good look for them. But why was Jack looking for that samurai in the first place ? Now that's the real question!

It's not really a matter of prejudice against samurai or anything. The crew is being so overly cautious about this for two reasons. 1. They're avoiding mentioning samurai at all since the minks recently got attacked by Kaido's guys looking for Raizo. It's literally just that it's still a sore subject right now, not because the minks inherently hate samurai for no reason. 2. Kin'emon and his boys chose this land as their rendezvous point and somehow Jack caught wind of this info. Which means whether Raizo's actually here or not, those 3 indirectly caused the destruction of the minks' home. It's like if a stranger broke in to your house looking for a specific necklace and nearly killed you for it. And just then someone comes around to save you and you become friends. But it turns out that new friend of yours is the one who hid that necklace in your house in the first place, without you even knowing. So the one who saved you is the one who indirectly put you in danger to begin with, that's more or less the dilemma the Straw Hats are facing right now.

Yeah, Pekoms is a big member of an Emperor's crew so he shouldn't be so weak as to get so easily killed by gunfire. Bege probably thought that catching him off guard in the back would help, but he should've known that anyone Pekoms' level is gonna be able to withstand some bullets. Everyone else in the country survived a week of war with Jack and the Beasts Pirates (including women and children), so of course Pekoms can handle a few shots.
