Agreed, everybody still has a lot to work through. I thought the most telling pair of lines were, “Why are you doing that”/“So that I can push you and you can push me.” Oh boy…He’s punishing himself for a failure that only ever occurred in his own head…which he then took out/projected on everyone else (intentionally or not). And for the love of God, somebody go hug Marcus. Ok, happier thoughts: Food Notes! — Ravioli with an egg yolk inside (one of the new dishes they talk about)- OMG, yes. I made a version of this once over the holidays for family. It’s so simple, but decadent. If you’ve never had it, I highly recommend it. — Chicago deep dish - When I spent summers on tour, there was usually a free day in Chicago and we would seek this out. Was it the best thing ever? Not really, but we were starving and it was pizza. A nostalgic novelty, to my mind anyway :)

"Fear does not exist in this dojo." Richie bringing the Karate Kid references. I actually love when everyone's in the same scene, stressful as it is (but also, pretty funny). Poor Syd, I would have slapped both of them lol. I've never worked in a restaurant but it seems pretty expensive to change the menu everyday.

The guy who brought in the micro radish was Christopher "Chi Chi" Zucchero. Joe is correct that he was the person Carmen gave his jeans to in exchange for meat in the first episode. He's the owner of Mr. Beef where that episode was filmed. Kevin should consider visiting it on his trip. https://www.theoriginalmrbeef.com (I haven't forgotten about sharing the list of all the restaurants featured in the show once you get to the end in January.) I believe (except for the opening scene with Sydney & her dad) this is the perfect example of a bottle episode. Not sure if it was done because they blew their budget on the previous episode or not but I enjoyed it regardless. Jeremy Allen White said the script for this episode was about 35 pages & was shot in 2 days. One thing nearly every actor who appears on this show talks about in interviews is how quickly they work & how few takes they do. According to IMDB, the F word is used 68 times in this episode. I've never counted myself but that sounds accurate.

I can only guess that they used the same ingredients in new dishes? Otherwise, it would be a financial disaster.

I will absolutely hunt out the ravioli with the yolk inside. I will never aspire to make it, though. I shall leave that to rock stars like yourself. Carmy has GOT to figure out how to let some stuff go, even incrementally.

Thank you! I would LOVE to visit Mr. Beef. It's weird that bottle episodes are usually lesser productions on most shows (the least popular episode of Breaking Bad "The Fly" is the show's most obvious bottle"), but in this show, they work so well. The claustrophobia really helps heighten the tension between characters.
