Strength is measured more so by the amount of magicules an individual has, rather than their skills, but ultimate skills are the exception to this. Even having just one can be a game changer and puts you at the top of the pecking order. So Rimuru having not one but four Ultimate skills is a really big deal. They go into it a little bit, later in the season, but for the most part, they have kind of been skimming over the importance of skills and what all their effects are. This series is also a Light Novel, so there is going to be stuff they just can't fit in the time frame they are given.

It seems like you guys didn't watch the OVA about Diablo (the demon that Rimuru summoned), you guys need to watch that OVA just after the season 1 ended, to at least have an idea about who he is.

Shion's unique skill - Master Chef - is literally one of the most broken skills in fiction. To allow the food to taste how she wants it to regardless of what she uses to make it or how she cooks it, the skill literally rewrites reality. It gets explained sort of in the far future (Season 3) - but we will see her use it again. She acquired it from the harvest festival when she came back to life but it isn't limited to just cooking, without getting into spoilers.

Just fun fact about Ramiris, when she said she could one punch Veldora she wasn't lying and she can really do it in her prime. She is the queen of spirits by being a queen means she is above the spirits of time, space, light, dark, earth, water, wind and fire, she has about 48 secret techniques, each of which is insta-kill tier. It's just that she was just recently reborn again thats why she is tiny and weak lol
