The Jon Snow thing is not just a TV show thing, although the books ended before the resurrection, it was always a strong theory that was where they were leading up to even in the books. Most book readers believed that was going to happen, using some form of Mellisandre or Jon warging into Ghost.

It's kinda hard to imagine how you will feel about the last seasons when you go in with the knowledge that people don't really like them. If I remember correct, season 6 was pretty much still universally loved, but I think it's easier to see some cracks after you've finished it all. The last seasons still has a lot of awesome moments, so I'm sure you'll enjoy them to some extent no matter what

Yes, I believe so, at least the next book will. Whether the final one after that does is, I suppose, based on how confident he feels about the direction he sets up with this one, and how quickly the writing would be if he sets it up correctly. I think the big reason for the delay, is that Martin is a bit of a perfectionist, and by book 5 there are many characters that he needs to satisfyingly tie together and kill off. I wouldn't expect it imminently though, he's been 3/4 done for over 5 years. He may be rewriting things over and over, but if we take him at his word, it is the priority for him to finish it. His time is also split by many other things though, (other series, the tv shows, conventions ect.) and that might have taken some focus away. When it comes to the mood of the fandom online, I think it's safe to say most people are angry or apathetic about it. I also think this weighs on Martin as per some of his blog posts. I personally am just happy with what he has given us, the books are fantastic. When it comes to peoples dislike about the final seasons, i'd say there are multiple camps of people who dislike certain aspects for different reasons, some more understandable than others, some are ridiculous. There is also bandwagon hate as an internet phenomenon to be aware of. Everyone was connected as we were watching together, it was massive in the cultural zeitgeist. I would say watch with an open mind and form your own opinions. I know plenty of people who still love it. I disliked it for certain reasons I won't mention, but I almost despise some other peoples criticism of it more than my original gripes with it haha.
