The whole show is kinda “lore”, it’s all weirdness and mystery. Season 2 is more heavy on the main mystery though, if that’s what you mean.

Think of it as season 1 is “what is the threat?” and season 2 is “how do we stop the threat?”

I'm reasonably certain that Dipper and Soos' stories were just made up. Otherwise, Dipper wouldn't have commented about Mabel telling a story they already knew. Boss Mabel was the first episode of this show I ever saw, so it holds a special place in my heart.
