I've always categorised the difference in Hook's behavior toward Emma as at first all he wanted was a good time, he was smarmy and just trying his luck, he's more genuine, confident and hot when he realises he wants more than just six from her, he starts to display more than his surface charm. Hook's speech to Emma in this episode is one of my favorites in the whole series

I always saw S2 Hook's smarmy, innuendo-laden personality as this armor he wears to keep people at bay after suffering the biggest heartbreak in losing Milah. And Emma comes in and sees right through him, just how he sees right through her defenses, and they catch each other off guard. And his pirate self sees something he wants and he just goes for it. I love it so much. That speech he gives Emma about winning her heart just destroys me every single time. I can't wait to see your reaction to the next episode omgggggg!! S3 is the best season all around. Always. The best.

I was going to say that too. It's clear that in the beginning it was just Hook flirty the way he carelessly does, because of his years of piracy. But Emma started to see through that and now since the beginning of the season he's started to be more of his real self.

I love Captain Swan so much. I still get little flutters when he says he'll win Emma's heart and not with tricks. Also I think I just noticed this but when the shadows attack, when they get Hook, Emma yells out "Hook!", but with Neal she doesn't scream out for him.

Hook genuinely pining for Emma is my favorite. I mean their first kiss, his speech about winning her, plus other stuff that happens in the future that I don't want to spoil. I love them so much, this rewatch has gotten me to watch a lot of Captain Swan compilation videos recently.
