I think I'm running late on this one. So, next year? Or, heck, why not celebrate Halloween anytime of the year?

Richard found this one on one of his recipe apps and showed it to me, so I tried it. It's fun and tastes pretty dandy, too.

This is going to be super quick.

Get yourself some lotus root, renkon.

Tadah!

Note: After you peel lotus root, it's a good idea to put a little vinegar in water and soak it in there so it doesn't discolor. I don't think it does anything to the flavor.

Slice it into rounds. I did this thin. But you can do thinner. I like the crunch of renkon.

Then when you place it on the cutting board, you can kind of imagine faces in there.

Cut so you got some eyes going. If you're lucky your lotus root will give you some little holes for nostrils.

Here's ones. It's got a forehead dot.

This adorable buddy. A mouth!

The original recipe (below) made skulls shapes. So you cut like this. But I like the gray alien (NHI) faces above, so did both.

Make your favorite pasta sauce.

Ideally heat up the renkon in some oil before adding the sauce and simmering. Lotus root never really gets soft. I can never tell when it's done, but, again, I like crunchy.

After simmering for awhile pour out on your favorite type of pasta. There you go! Skull and Alien Spaghetti! 💀 👽 🍝

Now the original recipe looks much better. They used ikasumi sauce (squid ink). We can usually find it, but not yesterday, so I did the tomato sauce.

These skulls look much better, too.

Apologies for being late with this. I'm sure there are more creative things you can do with renkon and pasta. It was oddly and interesting texture. I liked it!

Oh, I also saw this one with mushrooms! clever!

XOXO,

This is a great idea, although I suspect it'll be easier for me to do it with mushrooms since there's no Asian grocery stores in my small city. So sad.
