I will say, while electric stoves are generally fine, the main disadvantage with them isn't so much time to heat as it is time to cool. Heat level adjustments that are instant with gas require a few minutes of carry-over time with electric.

I think with electric it's like 15% easier to fuck it up because using a cheap thin pan the heat will cluster more in one spot but like yeah you just have to take the habit. Sometimes I think making stir-fry with a real wok on gas instead of a fake flat-bottom wok on electric would be nicer but I also enjoy not having to deal with *any* gas piping in my house
