Here’s my take on over medium eggs. I’m a long time chef and over medium was something they harped on at the culinary institute as one of those things that you have to do well if you’re offering breakfast. If I go to a breakfast spot that’s supposed to be legit I ask for over medium as a way to see if the food is as legit as they say.

In my experience working as a short order cook for years, Over medium egg is a runny egg with the whites completely cooked and not “snotty”. Over hard is a broken yolk cooked pretty well done. Probably not right but love youse guys!
