Really enjoyed watching this with you both. I watched this a good bit ago, back when it was released. I didn't enjoy this nearly as much as the first, but it was still a good ride.

The John Wick movies get better each one; 4 is next March, 5 IIRC is fairly shortly after - but yeah apparently they have ideas to go on forever. As long as they're good I'll keep going to see them. John's nicknames - yeah I bet all the different mafia orgs have their own nickname for him. "where can he go" - I guess you'll have to watch 3 to find out ;) Worth doing because as I said they do they get better as the series goes on. On Fishbourne's character, he's under The Table like The Continental is, but Fishbourne's character fancies himself as not under it - though doesn't mean he's not under it. Honestly they also expand the lore in the third one if you're trying to figure out what's going on you'll get more of it. Like some of your questions are difficult to answer without getting into spoilers. Also "John Wick" and "too much of one thing" is oxymoronic ;)
